Pad ThaiWith a little prodding from sarahrowe, I finally got around to starting on a New Year’s resolution. On Saturday I attempted to cook Pad Thai for the first time. It was yummy, but I overcooked the noodles so it was a bit mushy. On Tuesday, I cooked an amazing African Pineapple Peanut Stew – made with kale, pineapple, peanut butter, and hot sauce. It was really good served up with couscous with sundried tomatoes.

Emily, it’s supposedly West African “inspired”. Have you had eaten anything like that?
